The last 18 months has been the most amazing experience which started last March opening The Fold EcoCafe,
www.thefold.org.uk which is now the home of the shaman's kitchen and where I now find myself cooking full time.
One of my biggest challenges during this time has been what i am told is, a right and left brain thing! That I'm at my most content being in the kitchen, the creative side of my brain, writing and interacting with computers the other. The web site contains some 30.000 words and months at the computer, then to be offered to set up the kitchen of my dreams as well as potentially full-fill the Grand Visions set out on the web site, sent me into creative brain heaven, and left me with what has seemed as an almost impossible task to write and get onto the computer.
Thankfully that period seems to have come to an end and now eager to share the recipes and ideas with you, the first being a
