The Foodtalk forum has recently been the target of a great deal of spam. To begin with we tried to remove the messages and members that were posting them, this did not deter them, so the forum was closed for a while. We have now altered the settings, allowing existing members to post new topics and browse and reply to existing topics. Guests will be able to browse existing topics. Unfortunately, we have had to suspend the registration of new members for the time being.

The last 18 months has been the most amazing experience which started last March opening The Fold EcoCafe, www.thefold.org.uk which is now the home of the shaman's kitchen and where I now find myself cooking full time.
One of my biggest challenges during this time has been what i am told is, a right and left brain thing! That I'm at my most content being in the kitchen, the creative side of my brain, writing and interacting with computers the other. The web site contains some 30.000 words and months at the computer, then to be offered to set up the kitchen of my dreams as well as potentially full-fill the Grand Visions set out on the web site, sent me into creative brain heaven, and left me with what has seemed as an almost impossible task to write and get onto the computer.

Thankfully that period seems to have come to an end and now eager to share the recipes and ideas with you, the first being a Pye lentil, kolrabi and chilli roasted pumpkin cottage pie with seeded mustard mash
Its made with a creamy and healthy cream sauce and the trials went down well to a full Cafe last Saturday, will finish the recipe in the next few days...

Hi all,

Made my first ever pancakes yesterday, and i dont mean to gloat, but they were the best pancakes ive tasted. Ok well ive probably eaten pancakes 4 times in my life, but still! 1/2 cup spelt flour, 1/2 cup oat milk, 1 egg, 1/5 cup brown sugar and a pinch of salt seems to work nicely for me.

I have a question though - what are people's thoughts on non stick frying pans? I have heard there are some toxic compounds in the non stick coating that are best not ingested
